Oats Muffins

Muffins are normally made with flour, sieved together with baking soda as a raising agent and then add butter, eggs and any flavourings (fruit, such as blueberries, chocolate or banana; or savouries, such as cheese). The mix is turned into a pocketed muffin tray, or into individual paper moulds, and baked in an oven.

Our Oats muffins are an extremely healthy variant on this delicious muffins.

INGREDIENTS

Rolled oats
115 g
Banana (over-ripe)
2 Nos
Egg
1 No
Honey
4 tbsp
Milk
90 ml
Black sultanas
10 g
Baking powder
1 tbsp
Baking Soda
1/4 tbsp
Vanilla extract
few drops

DIRECTIONS

Divide the rolled oats into two parts. Blend 70 g oats into a fine powder (flour-like consistency) and keep 45 g oats whole.

Mash the bananas till there are no lumps. We need around 100 g of mashed banana.

Mix together mashed banana, honey, egg, milk and vanilla essence until smooth.

Add oats flour, whole oats, baking powder, baking soda and sultanas to the above mix.

Combine properly and scoop out into six lined muffin moulds.

Bake at 180 C for approximately 15-20 minutes or till a toothpick inserted in the centre comes out clean.

Let it cool completely before de-moulding.
